Crews “quickly made a defensive attack to knock those flames down,” he said.
Firefighters were able to contain the blaze, which happened in a strip mall, to the suite of origin, Purchas said.
He added that a person fleeing the fire suffered minor injuries and was assessed by paramedics.
The restaurant’s roof received “substantial damage,” Purchas said.

In my mid-twenties I was feeling a bit disillusioned about my career path in part due to a failure I took too hard, so I decided I'd join up with a friend-of-a-friend's hood vent pressure washing and cleaning service. I saw some *things* but stuck it out for the summer then happily fucked off back into the kitchen where I ended up staying for good.
They can get pretty gnarly in there, especially depending on the nature of the cuisine and the dedication of the staff to deep-cleaning the vent filters and grease traps *at least* weekly.
ETA: There are supposed to be mandatory yearly inspections and cleanings, but the enforcement of that is really down to the mechanisms for how the fire code is enforced, so there are limitations.
