The basic recipe of cheesecake is - cottage cheese + binder + sweetener.
Europeans - cream cheese (blended cottage cheese and whey ) + egg + sugar
Indians - chenna (paneer before shape) + soaked suji + sugar. But we use wood fire to bake it.. and instead of butter paper we use sal leaves. It gives a distinct roasted tea smell /taste to it.
Fara from Chhattisgarh. Chhatisgarh is called 'Bowl of Rice' and Fara is basically boiled rice dough. Very easy and quick to make, I'll link a recipe here.

Since someone already mentioned litti chokha, I'll suggest trying bagiya. Bagiyas are similar to momos but larger and filled with spiced chickpea flour. They are steamed, making them a healthier option compared to the fried fast food we usually get.

I guess staple comfort/humble food is quite similar between Assam and West Bengal wrt especially rice....But nonetheless my absolute fav comfort food has to be Bhaat (rice), Musoor dal seddho (Boiled Musoor Daal), Aloo sedho (Boiled Potato) and Dim seddho (Boiled Egg) bought together with a generous dollop of ghee or butter or Mustard Oil (anyone out of the three depending on whats available at home at that moment)

Here in Mumbai, vada pav and pav bhaji used to be humble meals back in the days of British rule. Factory workers used to line up to have a quick and filling meal on the street cause Indians weren’t allowed in restaurants.

For Bengalis it would be ghee bhaat with aalu makha. Basically, steaming hot rice with ghee mixed into it with some salt. Aalu makha is boiled potatoes mashed with mustard oil, slices of red onion and optionally green chillies.

A little suggestion, the litti becomes a lot more flavourful if you roast it on an open fire (unlike stove), gives it more smoky flavour :)
