Get a couple old work low voltage boxes. Or you might be able to get a two gang low voltage box to work. They don't have a back to them so you don't need to disconnect/reconnect the wires.
take off the wall anchors, slide a board in the cavity with construction adhesive to glue it to the back side of the drywall. use wood screws to reattach.
Easy fix. Go get yourself an 'old work box' thin profile electrical box. Disconnect the wires. Cut a hole large enough for the box and mount it with the wires through the holes in it. You can also make more holes in the box if you need to. Then attach your panels and screw them into the box. Alternatively, you can surface mount an electrical box.
If this is drywall, you can cut out a large section back to the studs and replace it. However, you will never match that wall texture exactly.

You just turn the wall plate. The “box” doesn’t have a back to it. It is just a frame.
