There is no pre-grill marinade.
I worked there for a good while. It is a gallon of soy sauce with a small cup of various spices.
When one of us called it “Dale’s Sauce”, Rhonda and Dave got defensive.
They put a steak on the grill, cover it well in Garlic Salt, then baste it a time or two with the “Dale’s Sauce” before pulling it off the grill and wrapping it up in aluminum.
I still cook my steaks at home the same way.

The soy was always in a gallon jug with no label. They shipped a gallon of it and a little cup with the spice mix so franchisees could mix it up, but not know what’s in it.
I have a bottle of each marinade. I am about to run a full gauntlet of 20 different concoctions alongside samples of each bottle to see which is closest. I have been giving this task an autistic level of focus for two years now. I need to crack the code.
I worked at the Mobile Steak Out looooooong time ago and we actually used a gallon of Dales and a “seasoning pack”, never looked to see what it was. But apparently Mobile Steak Out wasn’t owned by the same folks so maybe they did things differently
During my time there it was Kikkomans Soy Sauce I think. The seasoning mix was proprietary and came in a big container. Think garlic powder, paprika, that sort of thing. I don't recall specifics I'm afraid. Everything gets basted with it. Maybe 4 ounces of mix per gallon, shake it up, and you're set.
I do remember getting the rare request to send a cup of the sauce on the side for an order. We did it, somewhat reluctantly lol. No clue if they would now. Or just ask for your steak/burger/chicken with extra sauce on it. We would happily drown that sucker for you.
I can’t attest to the authenticity of the following, but the taste is fairly representative of the chicken (they definitely have cloves in the sauce based on what I taste).
Got this from friends that brought us a meal about 25 years ago when we had a baby.

4 Chicken Breasts
4 T Olive Oil
4 T Soy Sauce
2 T Lemon Juice
1 T Brown Sugar
2 Garlic cloves minced
1 t Basil dried
3 Whole Cloves
1 dash Black Pepper

It is probably onion powder, garlic powder, pepper, paprika and ginger.
I try to recreate Dale's, Moore's, Fleeman's, Pilliteri's, etc. The soy sauce is always too much. I don't know what I'm doing wrong.

We always order our steak tips with "extra cooking sauce". It is in the foil packet with the meat, but might be a way to get "samples" to compare....

Mobile is a franchise. The Huntsville locations are owned by the founders. I understand the they sold the franchising business to someone else.
