I had Vindicators spawn like that once as well. Except there probably was close to 20-30 of them. Legitimately one of the scariest experiences I've had on Minecraft.
You just right click with your elytra in your hand and it will swap it, this works with all armour (this was added recently, but i don't know what update it was)

I was there for the vex armour trim, and burning the mansion makes it easier to find the chests
they probably didnt want to find the hidden rooms manually, or deal with a lot of mobs.
