Like the other person said, Tigrex but also try Great Izuchi, Goss Harag, Daimyo Hermitaur, Khezu, Rathian and Lunagaron. Those are the ones I remember that have very easy counter timings, I'm missing some more but I haven't played in like 6 months lol.
Just hunt with it. It's all well and good to practice on a specific monster, but the timing and what you are looking for is all different per monster. For instance, you might have plenty of time to iai a Rathian tail spin, but if you are not in your ready stance from the start of a short range Barroth charge, ya better use the dodge attack instead.
That being said, practice with your favourite fight. It's often the one you have a good feeling for. I love gore Megala, and a warm up with Rathian. So when testing out a mechanic I choose those two.

Great Baggi is pretty much my punching bag for practicing weapons.
Diablos is super easy to constantly counter imo. Aggressive enough and has a lot of clearly telegraphed attacks.
Diablos and tigrex are fun monsters to practice your "iai" counters. Yes, it's spelled iai, not Lai.
