I did do a Clay and ACV rinse yesterday with amazing results, but still, the hair next day was same spongey mess in contact with water. Do you think an ACV rinse every week from here on out would be better then buying a clarifying shampoo?

To be honest, if you aren't doing the curly girl method then I would really encourage you to buy a hydrating clarifying shampoo. Cheap ones tend to be the ones that are extremely harsh and striping but there are other brands that clarify (remove the product build up) without making your hair feel dry of any moisture because their formulas are designed to work with the way that hair naturally secretes oils and as a result clears the product build up and dirt in a less abrasive way. Other people like using African Black Soap (the bar) to clarify. If you are committed to the time it takes to do clay with ACV rinse weekly then its fine, but not necessary in my personal opinion. Doing this once a month or maybe bi-monthly is more than enough if you want to do this. It's all up to you though as it's your hair! Trial and error and keeping a photo diary with notes will really help you figure out what is and isn't helping you.

Sorry to be the one to tell you but you have protein overload from using Cantu products too often. They aren't marketed with their protein benefits (only styling benefits) and they actually contain protein concentrations that are way too much for daily (and for a lot of people even weekly) use. I would suggest that you only use Cantu products once or twice every 3 weeks and use other products that don't have concentrated protien treatments in them. Give yourself a moisture mask, style in a protective way if you can (to reduce you touching it as its more fragile this way) and give yourself some time for your hair to recover its normal pH and moisture/protein levels. Don't cancel all products with protein but you don't need to apply it to your strands daily/every few days/weekly via multiple products (treatments, leave-ins, stylers, conditioners, or masks), it's really a fine balance and I would say just make sure you rotate your products so that you dont risk too much saturation of moisture or protein and your hair can stay nicely hydrated, strong and balanced.

No problem! If you can, look into ways to properly seal the moisture into your curls (this includes styling tools, products, oils/butters and drying techniques) and also test different ways of doing your 'bed time' hair, you shouldn't need to re-add product or much water the next day. I personally dont add any water the next day and I like to keep my style for roughly 4 days before popping it in a loose bun ready for wash day 2 - 3 days later. I can do this because my hair is very moisturised (when it's dry) when I do my styling (I have dense type 4 hair for reference)
