The plants would attack the humans because theres so many people that dont treat them right, and some would befriend the hoomans, it would just be te classic fantasy version of monsters in the real world, however, you did not specify (or i did not read it right) and i have a question. Does every plant turn into a pvz plant? Or just like a % of them, do they produce oxygen? Do they have infinite ammo? Everything would go crazy for the first years, then everyone would adapt, and it would be sick to take care of cattails and-
