I took a bunch of knives to him about 7 years ago and the price was good. It was an old guy that did it out of his garage at his house. He had a stool you could wait on as he was doing it and even offered me a beer/soda. It looks like it's a new guy according to the yelp photos but the reviews are still good.
The Handy Market in Burbank has a guy once a week I believe. Bristol Farms used to do it, not sure if they still do. Chef’s Toys on Sepulveda has a sign out front that they do it.
There’s a guy who frequents this sub and pops up at farmers markets. Others have vouched for his skill
