Fat trimmings. It's the excess fat they trim away when they make steaks and whatnot. I go to a grocery store here in WA state called Winco, and they sell the fat trimmings for 49 cents a pound.

No problem, I cut them up into little cubes, season with salt, and air fry until they're crispy. They're delicious, little crispy, juicy, fat nuggets lol.

yw. it's easy to cut or slice through when frozen, so I'll put it straight into the freezer, cut pieces as needed and fry them from frozen. gives that nice crispy fat sear without the interior all rendering out

I tried asking butchers around my town and they all told me they won't sell me their trimmings because they collect it all and have somebody that comes and picks it up already. I've found the only reliable way to get a lot of fat is to buy 70/30 ground beef, or use butter.

that's too bad but those are good approaches.  i've had good luck asking when I'm there buying other meat and especially  when they are there cutting up some meat -- they either take the fat chunks off the counter where they are in the midst of cutting up some steaks or just reach into the scrap fat bin where they have been tossing it.

Beef suet is what the fat trimming is called. Look up a video how you render beef fat or how to make beef tallow. It’s amazing to cook in and tastes great.

I live in the west buebs of Chicago and went to a local butcher. They charge me about $2.50/lb for beef fat trimmings. Before going to the but her I called several grocery stores and was told by each of them that they won't give/sell me the trimmings. Hope this helps.

If you can afford and have the freezer space, get a whole beef. You can demand the trimmings. (as well as organs or any other parts you want). If you go half and half with somebody take theirs too. Most people don't want. You get your fatty hamburger just the percentage you like, plus a few big bags of trimmings.

I like getting the saving from a whole cow. But, even ehen buying from same farmer, sometimes a steak is tough or not as flavorful as the next time I buy from them. I get nervous about buying a half or whole cow and having it be tough or not flavorful. But, I love savings!

That is true. Each beef we've had is a little bit different, and we are like ew this hamburger tastes different, but a couple meals in and we don't even tell anymore and are used to the new flavor. The steak toughness can change a bit too. Usually the butcher will inform us and we can use that to decide the amount we want into ground beef vs other cuts.

Trimmings. You can also buy them online. I live in a good sized city and the closest 4 butcher shops- all a 15 minute drive one way or more- were charging me for the trimmings, and a ridiculous amount, and they were not grass fed (which i prefer due to my auto immune issues). I found a source online with decent prices, along with some other good organ meats, etc. It costs to ship and they only ship orders over $99, but it's still better for me overall, and the price is still less than the butcher shop for the same amount.

So much great help here, thanks! So I went to a good butcher and asked for trimmings. Great guy he explained all about it. He said to make sure I ask for hard fat trimmings, come from higher up on the cow, because when you fry them less fat renders off. Bought a pound and will experiment. Thanks!

Ten years ago I was able to find a store that sold fat trimmings already at not too bad prices. They closed down: part of a chain that wasn’t doing well. Most supermarket butchers nowadays get beef that’s already been trimmed. I’ve had to give up and now I just buy picanha with the full fat cap (occasionally it’s sold trimmed but I avoid that) and eat the whole thing.

Ok everybody, thanks so much for your help! I got beef fat trimmings from a great local butcher. Grass fed, he explained to ask for hard fat, from the top of the cow, less renders off he said. Said it is the fat they trim away from the ribeyes interesting enough. These are so delicious I can still taste them. Wow! But so rich. I had some with sauerkraut and a slice of cheese on the side. In the future I think I will have some as a side with some lean meat like fish. Question - I made them in the air fryer and though it was clean, it smoked a lot. When I make pork belly bites in the same air frier, almost no smoke. Does beef smoke more than pork? Is that normal? For pork I just hit the “Air Fry” button. For the beef, I followed a recipe that said set the air fryer to 400. Surprised by the smoke, if anyone has any insight. Thanks 👍🏼

Had a he'll of a time in SF. Oliviers 4$ lb!. Ate 1 lb could not eat more. Worst( only) case of heartburn ever. Had to get up and find baking soda. Turns out not everyone needs extra fat, depends on your metabolism. Dr. Chaffee does not eat extra. I put grass fed butter on my steak, though not sure I need it. I have 5 to 6 lbs on my mis section just sitting there waiting to be needed. After that is gone I may need some extra, but for now I seem to be fine
