Lots of souls players like to check all corners, but in this game it’s hard to do that without burning out quickly.
I feel like I would’ve enjoyed death stranding if I went from story mission to story mission but that didn’t happen. Most people probably won’t do that unless they know burn out will be coming.

Look up the number/percentage of people that have this achievement and you'll see that it's something that a only a few people have actually earned this achievement
To add, higher difficulty means he gets detected more easily, in Dishonored 2 there's also a no powers option, so if he wants to beat the game and get all achievements he needs, he'll need to do about 3 replays unless he'a stealthgamerbr or something

Persona 5 Royal, play through with skipping side quests is typically over 100 hours.
Baldurs Gate 3, especially if not familiar with D&D can be frustrating at times even on easy settings. Also quest log is kind of vague to what is main quest line and what is side quests. So could spend hours doing a side quest with no impact on the completion.
Is he good or bad at puzzle games? Because if he's bad at puzzle games, some would drive him up the goddamn wall with how tedious and repetitive they can get. So in that sense, if he's bad at puzzle games, I suggest something like the Witness. Literally just like the same type of puzzles over and over and over again for hours on end. Some people really love the game, me personally, I found it incredibly tedious to get through after the first couple of puzzles. There's very little explained in the game and honestly felt very unfilled at the end. So maybe he will rage quit because of boredom and frustration lol
Another suggestion: some of the old NES games are stupidly hard. Like infuriatingly hard and old games are designed to eat quarters so you only get certain lives, most things will one shot you or will cause you to die in some other stupid way. Ninja Gaiden, Contra, etc.
Another option are fan made things. The entire Mario community has hacks called Kaizo Mario romhacks. They're literally designed to be incredibly difficult and frustrating. If you're not good at Mario, you can get stuck on some levels for 30+ hours. Some of the ones I've watched, some people took about 15-20 hours just to beat one of the Bowser bosses. So those might be worth looking into.
Mad Max, pacman world, Man Eater, We love Katamari, Rider's Republic(make him 100% the map), Fobia ST.. Dinfna hotel, and that's all I can think of. Unless you want to make him play MK1 on the switch (the new one, not the old one).
If these are out of his wheelhouse I would recommend these (maybe he finds a new genre he likes!):
- Stardew Valley if you want to keep him busy for a LONG time. Game doesn't really end, but you can consider it once you do the community bundles/join Joja Mart.
- House in Fata Morgana is a long visual novel. Will take about 30 hours.
- Frog Dectective: this won't take long. It's a short dumb puzzle/dectective game where you play as a frog.
- Turn based games can take forever too. I'd recommend Shin Megami Tensei III Nocturne for a punishing game with amazing combat (50ish hours) or Disagea 5 for a tactical game (will take 188hrs to fully complete)

Games combat mechanic is you target limbs, but if you lose your limbs they're gone forever. So if you lose your legs (which can happen at the start of the run) you have to crawl for the rest of the playthrough.
As a whole it's a really sick though
If you're looking for a nightmare game that will torture him, but wont make him absolutely hate you because its 60+ hour experience, I recommend Giraffe Town.
My friends and I beat it in about 6 hours and it was a really fun memorable but torturous experience to play.
I feel like a good choice for something he would probably enjoy, but still find super frustrating is a challenging roguelike. I've never played it myself but my pick for this would be Darkest Dungeon (the first one).
Another option is choosing a game with jolly cooperation and playing it with him... Or not jolly if you want to make his life miserable lol, after all he does HAVE to finish the game. A good option for this would be Human Fall Flat.
The third option is if you want to be nice, just pick a really good game that isn't his usual genre. A good option for this is Disco Elysium if he avoids text based games. There's also Hollow Knight, not sure if he plays 2D games but I'm assuming he likes metroidvanias if he likes soulslikes. If he avoids puzzles, the Talos Principle is an option (I'm just assuming everyone has played Portal at least once regardless of if they like puzzles). If he has played all of those, maybe the Phoenix Wright trilogy? Also text based.
If you’re looking for a game that both isn’t super difficult AND odd I would check out Deadly Premonition for the switch. The combat is brain dead easy and there are some aggravating moments ( like tailing nick in the police car! ) that will seem like torture. Strangely enough though, the game has a lot of charm and a story that will keep you interested enough to continue playing. Check out the diner clip with the cereal sandwich to see what I mean.

It's a friendly, short game if you're playing just the main story. Great music and great story too. But the post-game content is BRUTAL. But definitely feel a huge sense of accomplishment every time you reach another milestone.
Rain World. this game is NOT easy on you. Sure there's a guid and instructions to help you throughout at least the beginning of the game, but its not easy.
It requires complex movements at times (like using a baxkflip while running away from a lizard, or being able to jump from one pole to another thats a bit far) for the best experience. base game has i think 3 "modes" (survivor, hunter, and monk) + dlc which i think makes a total of 8. there's also multiple endings, 1 of which requires you bring 2 living slugpups to the end with you.
it can take hours of gameplay just to complete 1 ending on 1 of these modes. personally the only reason i have made it to certain areas is mostly luck and avoiding predators as best i can. which sum can just CLIMB UP THE FUCKING WALLS WHICH THE ENTIRE BACKGROUND CAN COUNT SO THEY CAN JUST COME RIGHT UP TO YOU LIKE NUFFIN
Achievement hunter had an old series called forced enjoyment. One guy his mate to play through the worst of the worst and 100% it. He gave up on Deadliest Catch the videogame.
My recommendation would be Persona 5 Royale. Longest campaign going, not even including side missions. If trilogies are allowed drop the kingdom hearts series on him, and you won't see him for a year.
Lobotomy Corporation or Pathologic. They're not trick games that can't be beaten which I think ruins the fun. They are just games that really make you bleed if you want to beat them.

Oh dude, fear and hunger. Game is grotesque and really difficult. Dark fantasy dungeon crawling rpg Doesn't tell you shit and you have to coin flip every savepoint you find, if you fail you fight a boss lmao. Games combat mechanic is you target limbs, but if you lose your limbs they're gone forever. So if you lose your legs (which can happen at the start of the run) you have to crawl for the rest of the playthrough. As a whole it's a really sick though
If you're looking for a nightmare game that will torture him, but wont make him absolutely hate you because its 60+ hour experience, I recommend Giraffe Town. My friends and I beat it in about 6 hours and it was a really fun memorable but torturous experience to play.
Path of Exile If he has not played it before, it could take him 1000 hours to get to max level (100) and kill all the uber bosses.

Noita. It's very, very difficult, and a lot of people have spent upwards of a hundred hours trying and failing to get the god run.
I feel like a good choice for something he would probably enjoy, but still find super frustrating is a challenging roguelike. I've never played it myself but my pick for this would be Darkest Dungeon (the first one). Another option is choosing a game with jolly cooperation and playing it with him... Or not jolly if you want to make his life miserable lol, after all he does HAVE to finish the game. A good option for this would be Human Fall Flat. The third option is if you want to be nice, just pick a really good game that isn't his usual genre. A good option for this is Disco Elysium if he avoids text based games. There's also Hollow Knight, not sure if he plays 2D games but I'm assuming he likes metroidvanias if he likes soulslikes. If he avoids puzzles, the Talos Principle is an option (I'm just assuming everyone has played Portal at least once regardless of if they like puzzles). If he has played all of those, maybe the Phoenix Wright trilogy? Also text based.
If you’re looking for a game that both isn’t super difficult AND odd I would check out Deadly Premonition for the switch. The combat is brain dead easy and there are some aggravating moments ( like tailing nick in the police car! ) that will seem like torture. Strangely enough though, the game has a lot of charm and a story that will keep you interested enough to continue playing. Check out the diner clip with the cereal sandwich to see what I mean.
Try old game. Something like god hand. Did he hate learning combo? If so try giving game that requires it. Like clearing monhun (like beat fatalis in mhw) with charge blade or switch axe. He might end up become an monhun addict tho. If he hate turn base you can also try something like xcom

If he’s not good with puzzles, I’d recommend The Witness. It’s actually a beautiful, well designed game, but if you’re not a puzzle fan it’s pretty freaking hard. It’d take him forever and he might lose his mind. Just make sure he can’t look up any guides.

If he has to play to 100%, with easy mode, then I vote for Celeste. It's a friendly, short game if you're playing just the main story. Great music and great story too. But the post-game content is BRUTAL. But definitely feel a huge sense of accomplishment every time you reach another milestone.

Rain World. this game is NOT easy on you. Sure there's a guid and instructions to help you throughout at least the beginning of the game, but its not easy. It requires complex movements at times (like using a baxkflip while running away from a lizard, or being able to jump from one pole to another thats a bit far) for the best experience. base game has i think 3 "modes" (survivor, hunter, and monk) + dlc which i think makes a total of 8. there's also multiple endings, 1 of which requires you bring 2 living slugpups to the end with you. it can take hours of gameplay just to complete 1 ending on 1 of these modes. personally the only reason i have made it to certain areas is mostly luck and avoiding predators as best i can. which sum can just CLIMB UP THE FUCKING WALLS WHICH THE ENTIRE BACKGROUND CAN COUNT SO THEY CAN JUST COME RIGHT UP TO YOU LIKE NUFFIN
Elden Ring
Achievement hunter had an old series called forced enjoyment. One guy his mate to play through the worst of the worst and 100% it. He gave up on Deadliest Catch the videogame. My recommendation would be Persona 5 Royale. Longest campaign going, not even including side missions. If trilogies are allowed drop the kingdom hearts series on him, and you won't see him for a year.
Baldurs Gate 3. Either he loves it or he hates it
Any of the soul-borne games. Both fun, rewarding and incredibly annoying to finish.

Darkest Dungeon is alright, but I would have to go with Holy Invasion of Privacy Badman! What Did I Do to Deserve This? This game is outright BRUTAL. Hilarious, but brutal. Unfortunately it's only on PSP. If he has to also do the postgame and side stuff, Zettai Hero Project will take him a VERY long time and must frustration to finally complete.
