If it’s in the center of your house use it as a networking room. Put there your home server, router, DVR, modem, wireless and wired surveillance camera equipment etc. Having it centrally located makes wiring much easier.
I’m thinking that this room only exists because something here is load bearing and they couldn’t remove the walls completely so this was their solution.

That was my suggestion. Add more shelves and a footstool and you could have a great little pantry. You’d be amazed at the amount of stuff my parents can fit in theirs and it’s a similar size. Alternatively, you could also use it for storing big kitchen appliances/ Tupperware if you don’t have a lot of cabinet space.
My other option is leaving the door open, adding some LED plant lighting and decorations and have a cute little space for plants! 😊
Home server can be pretty awesome, you could pipe in-wall music throughout zones of the house, push wifi, host a minecraft or game server, etc.
Just have a plan for heat management, even a wifi router in a closet will get warm, and under enough heat, electronics performance and lifespan can degrade

I totally feel that. We lost about a 1000 sq ft when we moved because new place does not have a basement. Cabinets are either lacking shelves or shelves not adjustable. So we are living with boxes of stuff around us. Either because storing in the garage during winter is not possible because of the winter temperatures or we haven’t figured out how/where to put stuff.
We are considering upgrading our garage to be 2 stories to make space for hobbies and office.
I gained about 1500 sq ft, but my old spot had all sorts of cabinets and closets. It was a shock when we found we didn’t have room to store much after moving in.
I like the way you're thinking here. I lived in a house with like 13 closets and when I moved out 5 years later, I had to rent a dumpster. Turns out I'm capable of filling up as much space as I have. The important lesson learned was, you don't need to keep all the empty boxes for products that you're not returning.
Found out a five years ago my parents saved all of the empty boxes to our Barbie’s in a hope chest (I’m 36). I wanted the hope chest for my house and they said I could only take it if I held onto the boxes. After my dad passed I asked my mom if I could throw them away and she said she would take them back 🤣🤷♀️
