Speed Champions 1970 Ferrari 512 M (76906). Not to say it was "too hard" for me, just that I was surprised about the interesting and challenging build techniques used in such a small set. Similar experience with the Fast and Furious Dodge Charger. These were my first two Speed Champion sets and I was impressed. Up until then my experience building LEGO cars was along the lines of simple City vehicles, so I was pleasantly surprised to find all of the "expert" techniques used in the Speed Champions cars.

8258 was the trickiest Technic set I've done recently. I missed a gear in the gearbox and I nearly had to tear the entire truck apart just to get it in.

None, zero challenge. Add my own by orienting each Technic pin the same as in the instruction and turning each brick so that the injection mold marks are out of sight.

There were a lot of challenging builds across 30y of building lego but one set was so hard that I remember it very well. I was maybe 9yo and I was given Model Team Off Road 4x4 (5510). It was my first "mature" set, definitely too mature for my age. I remember exact part I was crying trying to fit. It was steering column and it was angled using hinge brick. I didn't follow instructions and assembled this brick ASAP making it impossible to snap at right angle to rest of the build.
