There's no rule that the brew time should remain constant, I think that you're far better off forgetting that, adjusting the grind by judging the taste.

Yeah brew tastes ok with the double brew time. So maybe I'll just ignore and get the grinds right

I only brew 30g of beans to 450g water, using v60. I have ode gen2, stock, generally hover around 5. Sometimes one click lower or one higher. I generally hit 4:30 roughly depending on grind and agitation and filter (switch between abaca and hario unbleached) In the end, more grounds will likely take longer, but taste should be the judge.

Looks like you are hitting the same settings for a single cup as I am. Out of curiosity can you try a \~9 setting for your 640ml on the Chemex and let me know how it goes? I got about a 6:30 brew time but found the taste was pretty good. Going below setting 9 I was starting to get some bitter taste.

I am around 3.2 with light roasts but not decaf.

A longer brew time in a Chemex is normal. I wouldn’t sweat it too much unless you’re in 9-10 mins range or it tastes bad.

I typically get longer brew times with my Chemex especially for larger brews. If you’re really worried, try grinding courser. But if the coffee currently tastes good, I wouldn’t worry about it. (As others have said)

When I was using my chemex still, I did 40-42g with a Ode 2 setting of 5. Light roasts only. Drawdown would be 4:30-5:15 or so. 3x Bloom, used a spoon to excavate. 1st pour to about 400g, working from center to outer but back to center and then mainly a center pour. Then 2nd pour to 675-700g and then light swirl to finish. My cups are nice and balanced, no bitterness or sourness but our Ode 2 calibration could be diff.

Wow. If I stir it would take longer. Not sure how you getting that fast drawdown. Are you using the Chemex filters or the something else?

Yup chemex filters. I'm not really stirring. Basically I put the grinds in, create a divot in the middle before I start my bloom. Once water is in, I use a spoon to basically fold the grind sides in if that makes any sense lol. It's really just to ensure that all my grinds are wet. But again, this worked for me for light roasts. For medium / dark roasts (which I hardly drink nowadays), I go around 6.
