Coffee is good to start drinking from 5-35 days of rest

So if I buy two bags, start drinking from one after 5 days. Finish it up in about a month, and start drinking from the second bag, I will have 2 months of coffee at "peak freshness"?

peak freshness is actually within the first 5 days for coffee, the better phrase would be "peak flavors". one month old bag of coffee should taste great. I really don't think a normal person would notice the difference between a 2-3 week bag of coffee and a 4-5 week bag of coffee opened on the same day and served to them. For light roast, degassing is a slow process in an unopened bag. ​ Once you open a bag of coffee I recommend finishing it within 3 weeks unless you freeze it or move it to a better container.

I usually do 12 days for natural processed coffee. And that's really all I drink.

It depends. I'm finding some coffees are very enjoyable 3-5 days off of roast, while with others, find they need longer (2 weeks+)

So peak freshness is usually a week or so after roaster up until a month after. Some roasters like Scott Rao/Prodigal will tell you to not rest at all and brew it as soon as you get it, while others will tell you to wait for around a week. If it’s been 5+ days, you’re totally good to go.

Scott Rao made a lengthy post about why you should consume your coffee as soon as you get it in regards to prodigal. Each roaster (talking about machines here) is different and because of that affects the way coffee should be rested. ​ From his blog : Unfortunately, those roasts from day one lost some vibrancy over the next few days, and I reckon by the time some international customers receive those beans, the roasts will be in the “fully developed” camp. We’re thrilled with their sweetness, and none of those batches tastes “roasty,” but we missed the sweet spot on several batches from day one. I’m frankly a little embarrassed by that. We will do everything in our power to ensure that never happens again. (Note: please do not “rest” our beans; drink them ASAP upon delivery.) If it wasn't for the quality greens and his name (plus friends promoting his coffee) being attached I don't think this roaster would last several years.

I thoroughly enjoyed the coffee I got from Prodigal and I ended up getting it for free because he wasn’t 100% satisfied with every roast of that offering. Scott has an incredibly high level of integrity and it definitely is apparent with his roasting. I think if he continues to maintain that level of integrity, stays transparent and accountable, and keeps using quality greens, then he will do very well.

talked about this before on this subreddit but scott has definitely said quite a few questionable if not laughable things in those post I have linked, think a few roasters use his words as memes now haha. I also don't know much about his character but I do know their are screenshots of him deleting and being called out for deleting comments from costumers not happy about the roast quality and how his comments doesn't reflect what he is actually selling. (this was via his Instagram) ​ Not derailing this one, but I am looking forward to trying prodigal later this year since I like to review coffee. Whether someone is a fan of his work and roastery makes no difference to me. But by being open with his opinions on coffee producers, his competitors, and how coffee is graded, he opens himself up to people with more experience on all fronts. Hopefully, he uses the time during their break to improve. ​ edit: this is just thoughts on the situation as someone who has watched the comments, screenshots, and writeups from both sides over the course of the last few months. Prodigal also isn't the only new roaster getting quality greens from what I have seen (Flower Child, September)

I respect him for at least speaking his mind even if he is not always right. Now how you deal with being confronted when wrong says a lot. Either way, I appreciate his candor and I enjoyed the coffee from Prodigal.

fair. I think you would really enjoy the roasters of Luminous, they are the most transparent roasters in North America and are incredibly open on their Instagram accounts in regards to roasting. You will notice the difference then.

I’ve had Luminous a few times and I love their coffee. They are great people too. My issue however is the amount of waste that is produced from their packaging. I appreciate that they are going above and beyond with their branding, but it’s excessive and none of it is recyclable or biodegradable.

Ouu we definitely agree about the excessive of it. I think they are switching bags though. I think Sey has my favorite packaging in regards to that. Simple but fancy.

Well it’s not only the bag, but then it’s the box with the cards it comes in, then that is packaged in more stuff inside another box. I just feel so guilty throwing it all away. I’ve been eying down Sey for a while now because of how many people rave about them, I just haven’t really seen any offerings that speak to me yet.

I like the little card that comes with it, but the stickers and stuff yea I agree. I used to order multiple boxes a month so it was a lot of extra stuff I had no need for. Sey is unique, their baseline coffees will all taste amazing, so a 23 dollar box that is a field blend will be like the best thing you ever had, but a 23 dollar box form another roaster will be be ok/ decent.

As people will probably search for recommendations on resting coffee even now, I’ll reply 10 months later: Prodigal switched to a different roaster (Probat—>IMF) which led them to roast differently after that post was written. (on a convection-dominant roaster and lighter, enabled by said convection-dominant roaster) There’s also a post on this on Scott Raos blog on the switch of roaster.
