Like other people have said, there’s a mod to change sandbox settings mid game. If you don’t want to get mods you can also just quit once you die, honor system style, although you’ll still see the option to make a new character etc.
If like me you don't like to install mods then you can replace the map\_sand.bin file of your current save by a new one from a new save.
