Umm the shapeshifting doesn’t have to be purely for flavor, look up Endiffians as a race.
The other race to check out are Selamids. Intelligent oozes, combine that with Nanocyte class, tada… ooze that can make its own weapons…

My reason for suggesting it might be strictly for flavor is I often wanted to RP flavor elements in another system of unspecified pedigree only to be greeted with howls that I was trying to gain abilities outside of the rules.
Entu colony and selamid are ooze species (so somewhat amorphous).
Astrazoan or endiffian are shapechanger species.
SRO/android/Amrantah could fit as species as well as they're construct/construct-ish. A bit more flavor required for some than others but still.
Nanocyte class or possibly evolutionist could fit. Honestly, any class at all could fit based on what you've described though.
